

Going organic means spending about twice as much on menu items. Yet, Antonio and Sarah are committed to the effort. Aside from organic meat and produce, Rellenos Cafe is stocked with sea salt, glutenfree flour products and condiments.
"My wife and I decided to clear everything out of our home with chemicals and we are trying to do the same at the restaurant,” Matus said. “The oil in our fryer is zero trans-fat and the drinking cups we use are 100 percent made from corn.”

Antonio and Sarah Matus, owners of Rellenos Cafe, have incorporated more than 100 organic items into their menu. They also feature fair trade coffee brands.
The shift in menu has a sound reason. “I’d like to stop serving chemicals to the people,” Antonio Matus said. “My sister was diagnosed with cancer and that made us stop and think about what we were eating and serving.”
